In-N-Out Animal Style Fries: Sautéing With Sudha [8]

I know one of the hardest things about this quarantine for me is not being able to eat out. And while a lot of people are still doing take out or delivery, it's just not the same as going to the restaurant with your friends to enjoy a fresh, warm meal. Fret not. That's why you learn how to bring the restaurants TO YOU. Since we have no other choice, I figured what better way to learn a new skill (and save $$) - learn to cook! Here's how to make the beloved West Coast chain's top item.

In-N-Out Animal Style Fries

Prep/Cook Time Fresh Fries: ~30-35 Minutes

Prep/Cook Time Frozen Fries: ~10-15 Minutes

Serving Size: ~2

What You'll Need:

•a couple russet potatoes (or bag of frozen fries)

•3 tbsp mustard

•1/2 cup mayo

•1/3 cup ketchup

•2 tbsp dill relish (non sweet)

•1/2 yellow onion

•american cheese slices

How To - Onions:

➊ Add ~1 tsp of canola oil into a pan on high heat. Dice up the onion finely and add into pan, turning heat down to medium-high. Sauté onions for about 10-15 minutes, adding a pinch of salt at your halfway point. I like mine a little more on the burnt side - but keep track of them based on how you like them. Once they're done - set aside until you're ready to build your plate

How To - Fries:

➊ If you're using russet potatoes, peel the skin and slice the long way into thin sticks (~1 cm). You don't want them too thick otherwise it'll take a while to fry. Once peeled and cut, dry them out as much as possible on paper towels.

Pour canola oil into a pan and keep on high heat until it's hot. Gently place the potatoes into the oil (this is where having the least amount of moisture in your potatoes is VERY IMPORTANT - if you don't remove most of the moisture, the oil will come popping out at you). Fry your potatoes for about 5-7 minutes, twisting them around in the oil until they're golden. Make sure you don't overcrowd the potatoes in the pan - they should all be in the oil and not layering on top of each other. Once done, put the fries onto a plate with paper towels (to soak up the extra oil) and season with salt and pepper

*If you're using frozen fries - follow the directions on the bag

How To - Secret Sauce:

➊ Mix the mustard, mayo, ketchup, and relish into a bowl. Mix together and taste test.

How To - Build:

➊ Take the fries and place on an oven/toaster safe pan.

➋ Throw on the American cheese slices.

Bake in the oven/toaster until the cheese has melted.
