Easy Homemade Loaded Guacamole: Sautéing With Sudha

And you're not just limited to chips 'n' guac - fry it, top it on your chicken, spread it on your tacos... If you haven't guessed by now, I. love. guacamole. I'm going to teach you how I make my loaded guacamole in like... 10 minutes. I also add a little zest to it by using pickled jalapeños instead of regular. It changes everything!! Easy Homemade Loaded Guacamole
Prep/Cook Time: 10 Minutes
Serving Size: 2-3
What You'll Need: •2 avocados
•1/4 red onion
•1 roma tomato
•seasonings (1/2-1 tsp each): garlic powder, salt to taste
•1/2 lime for juice
•5-6 pickled jalapeños
•bunch of cilantro
➊ Slice up your avocados and add it to a bowl. I like to slice my avocado in half, create a criss-cross pattern while it's still in the skin, and spoon it out. It's easier to smash when it's in little chunks in case your avocado isn't perfectly ripe. Smash down the pieces with a fork if you don't have a potato masher.
➋ Next, add your thinly chopped red onion, pickled jalapeños, and tomato chunks. Throw in your seasonings and mix everything together. Keep mixing together until it's as creamy as you desire. Squeeze in half a lime's juice. Taste test and add salt / lime juice according to your desired taste.
➌ Chop up your cilantro and mix it into your guacamole. Serve immediately. Garnish with extra cilantro.
•To store - not preferred, but you can store guacamole in an airtight container in the refrigerator. I've also found pouring a thin layer of water over my guacamole and covering it up with saran wrap.
•Ripeness - when picking out your avocados and you're planning on using them in the same day, look for it to be slightly soft and a purple-ish/black-ish color. This means it's perfectly ripe. Don't go for black and super sort - this means it's overripe. A dark green and hard avocado is not ready to be eaten yet.
