Creamy Spinach & Avocado Pasta: Sautéing With Sudha 
I'm a complete sucker for pasta and always have been. But the obsession has gotten so much worse as I've grown up. Like, marinara sauce is YUCK! to me now because I've spoiled myself with so many incredible sauces that basic, plain tomato sauce is just...boring. You shouldn't do it. You absolutely should not. And you wanna know why? Because making funky and flavorful sauces is SO. EASY. It seems scary but it's not, I promise. I'm going to teach you how to make a healthy and clean spinach and avocado sauce. Zesty, bright, and heavy - all without the bad stuff.
Creamy Spinach & Avocado Pasta
Prep/Cook Time: 15 Minutes
Serving Size: 2
What You'll Need: •pasta of choice
•2 handfuls of spinach
•3-4 tbsp minced garlic (or 3-4 cloves - chopped)
•a handful of cilantro
•1 lime for juice
•seasonings (1 tsp each): paprika, chili powder and red chili flakes (if you prefer spicy), pepper, oregano, and salt
•parmesan cheese (optional)
•cherry tomatoes (optional)
➊ Boil your choice of pasta in heavily salted water. In a blender, add spinach, garlic, avocado, cilantro, half a lime's worth of juice, salt, and 1 cup of pasta water.
➋ Once blended into a thick sauce, try the sauce and add specific ingredients based on your taste. If you feel like something is missing, it's usually either salt or acid (lime juice) or both. Try your pasta to make sure it's cooked. Drain once cooked, leaving about 1 cup of pasta water on the side.
➌ Pour your sauce into a pan and add your seasonings. If the sauce is too thick, add in a little bit of the pasta water you put to the side - you don't need to use all of it. Throw in your pasta and mix together. Top with lime juice, parmesan cheese, red pepper flakes, and sliced cherry tomatoes.
