Cheese & Pepper Crusted Grilled Cheese: Sautéing With Sudha 
What better way to funk up your grilled cheese than creating a cheese and hot pepper crust? You've heard of vampire style tacos, now just take the same concept and add it to your bread for a salty crunch! Add in a nice kick with toasting on jalapeños or serrano peppers and you've got yourself the perfect bite.
Cheese & Pepper Crusted Grilled Cheese
Prep/Cook Time: 7-10 Minutes
Serving Size: 1
What You'll Need: •bread of choice (i used ciabatta)
•1/2 tbsp butter
•cheese of choice (i used white cheddar and pepperjack)
•serrano pepper or jalapeño
•1 roma tomato
•olive oil (for drizzle)
•seasonings (1/2 tsp each): garlic powder, dried parsley
➊ Heat up your pan on low-medium heat and throw in your butter. Immediately add in your garlic powder and dried parsley and stir that into the melted butter. Do not let the butter burn! Place two slices of your bread and toast. Flip them once they've started to crisp. You'll be leaving them on the pan a little longer with the cheese so make sure you aren't over toasting it during this step.
➋ Once your bread is slightly toasted, remove from the pan and place a few slices of your pepper down in the shape of the bread. Quickly top with your shredded or sliced cheese and let it fry. Lay a slice of bread over the cheese to allow the cheese to melt onto the bread while frying against the pan.
➌ Scrape the pepper and cheese off the pan and flip your bread. You'll see that the cheese and peppers are now melted and fried into the bread. Remove from the pan and add your other slice of bread. Top with cheese, sliced tomatoes, basil, and a slight drizzle of olive oil. Toast to your liking. Remove from the heat and place your other slice of bread on top. Slice and serve.
