10 Min Shrimp Scampi: Sautéing With Sudha

10 Min Shrimp Scampi

What You'll Need:
•pasta of choice (i used spaghetti)
•1/2 tbsp butter
•1/4 cup chicken stock
•1 1/2 - 2 tbsp garlic
•frozen, deveined shrimp (i used small - 8-10 pieces)
•crushed red pepper
•salt + pepper
•1/4 chopped onion
•~2 tbsp lemon juice
➊ Thaw your shrimp according to the instructions. Heat up a coated pan of oil on medium heat. Place the shrimp (each in its own spot) and cook for about 3-5 minutes on each side until they're fully cooked. Sprinkle salt, pepper, garlic powder, and crushed red pepper before flipping the shrimp.
➋ Remove the shrimp from the pan once cooked. Before starting the sauce, take your pasta of choice and dump it into heavily salted water. Let it boil. In the same pan as the shrimp, add a little more oil and throw in onions. Let them cook for about a minute and then add butter, garlic, and stock. Lastly, add the lemon juice. Mix all of them together until it starts to thicken.
➌ Once the pasta is cooked, add the pasta into the sauce. Mix well. Add salt / pepper according to taste. Plate and top with parsley / cilantro and parmesan cheese (optional)
